Special Fried Rice (Chinese Style)


During my time living in the UK it came to my attention that Chinese food was a heavy favourite when it came to take out options, including yours truly. My favourite is King Prawn Fried Rice. When I returned to Nigeria, I saw that a lot of Chinese Restaurants has also popped up especially in Lagos. I was amazed at how it has become a popular delicacy not just in the west but all over the world. To me, this meant  that there must be something unique about their food that made it so well loved by everyone. 
To this end, I decided to learn how to cook it as well and started researching different recipes online. Every recipe was unique in its own way although there was  also some similarities between the different recipes. Considering various factors such as availability of ingredients and cost amongst others, I came up with a recipe of my own making sure to keep the basics to ensure that the Chinese effect is not lost.
The Chinese Fried Rice is different to the Nigerian Fried Rice (expect post soon) as it is more cost effective and takes less time to prepare (in my opinion).

The Recipe
Preparation Time: 10 mins
Cooking Time: 20 mins
Total Duration: 30 mins

Ingredients
Cooked and cooled rice
Soy sauce
5 Eggs, beaten
Green Peas
Carrots, chopped
Spring Onion
Turkey, chopped
Black Pepper
Sesame Oil
Chinese Five Spice
Garlic, crushed
Butter

Directions

  1. Cook the rice until tender, not too soft, and let it  cool. It is better to cook it the day before and refrigerate over night.
  2. Butter the pan, add the egg and scramble. After scrambling the egg, turn it into a bowl and clean the pan before continuing. 
  3. Oil the pan with the sesame oil. Then, add the garlic and spring onion.
  4. Then add the chopped turkey and saute for about 5 mins.
  5. Add the carrot, peas and chicken stock.
  6. Add the cold rice, soy sauce and Chinese five spice to taste. Then, stir and let fry for about 5 mins.
  7. Now add the scrambled egg, and black pepper. Then stir and fry for another 5 mins or until cooked.
  8. Serve and enjoy. It is best eaten hot.
One of the reasons why I love this recipe so much is that it is a great way to use up left over rice and avoid wasting food.
Other vegetables and meat can be added as well such as Prawn, chicken, sweetcorn among others.
