Spaghetti Stir Fry

I cook spaghetti a lot and have made different versions including spaghetti bolognese and jollof spaghetti. Having gotten tired of those, I decided to have a go at spaghetti stir fry.
I usually make stir fry with egg noodles anyway. So, I figured why not use spaghetti? I tried it the first time and it turned out great. Ever since then, it has become one of the most loved meals at home. I hope once you try it, you will like it as much as we do.

The Recipe
Serves 4
Preparation time: 25 mins
Cooking time: 25 mins
Total duration: 50 mins
Ingredients
300g Spaghetti
6 medium carrots, sliced into long
strips
half a bunch of Cabbage, shredded
1 Onion, sliced
4 Red bell peppers, sliced
3 Green bell peppers, sliced
6 Scotch bonnet peppers
1 can of Sweet corn
Salt
Curry
Thyme
Vegetable Oil
Knorr Cubes
Knorr Cubes
Directions
Heat up the oil in a frying pan.
Add the scotch bonnet peppers and onions and fry for 2
mins.
Add the sausages and fry for 5 mins
Pour in the carrot and cabbage and stir.
Then add the red & green bell peppers and the
sweetcorn.
Add salt, curry, Knorr and thyme.
Leave to fry for about 5 mins.
Boil the spaghetti in a pan of boiling water for 10 to
12 mins and drain.
Add to the vegetables and stir together.
Simmer for another 2 to 3 mins.
Serve and enjoy.

Tips:
It is best eaten while hot.
After draining, run cold water
through the spaghetti to ensure it doesn’t stick together.
It is better to use a
non-stick pan to reduce the amount of oil used for frying.The sausages can be replaced with chicken breast.
