Quick Fried Rice

Hey guys,


So, I came up with this on a whim. I wanted to eat rice with vegetables but at the same time I didn't want a meal that would take ages to prepare.
In this view, I made the decision to just put something together and this was born. I didn't think it was going to turn out so good but it did. Hence, why I decided to post it. I recommend it for students and busy professionals.

The recipe
Serves 1
Prep time: 5 mins
Cooking time: 30 mins
Total duration: 35 mins

Ingredients
100g Rice, washed
3 pcs medium carrot, sliced
Small bunch of cabbage, shredded
1 small green pepper, chopped
1 small onion, chopped
2 red bell peppers, chopped
1 scotch bonnet pepper ( ata rodo), chopped
Nigerian cheese curds ( wara) - optional
Curry, thyme and knorr seasoning
Salt to taste
1 tsp vegetable oil

Directions

  1. Boil the rice in boiling water for about 15 mins and drain afterwards.
  2. Heat up a non-stick pan and add the oil. Then, add the onions and scotch bonnet peppers and fry for about 2 mins.
  3. Add the vegetables and remaining peppers. Season with salt, knorr cubes, curry and thyme according to your preference. Leave to stir fry for about 5 mins.
  4. Then add the already drained rice  along with the Nigerian cheese curds (optional)and stir. Reduce the heat and leave to simmer for about 8 to 10 mins.
  5. Serve and consume while hot. You can accompany it with any protein of your choice- be it chicken, meat or fish. I chose turkey for mine.
